Easy to make sausage roll twists with a gluten free pastry

Try these gluten-free twisted sausage rolls for a lighter, crisper, and more flavourful take on a classic appetizer. If you are gluten-free and have not been able to locate phyllo pastry, you can prepare your own. With that being said … this is not phyllo pastry, but it is a great alternative. Be prepared, as these gluten-free sausage roll twists are exceptionally delicious. They offer the best combination of savoury, crispy, and flavourful elements, all while being thinner, lighter, and designed for dipping.

Thin, crispy, gluten-free pastry wrapped around your favourite sausage filling, twisted into a fun snack-able shape that’s ideal to dip into tomato sauce, honey mustard, or chutney … any of your favourite dips. Made with a homemade pastry (that’s surprisingly simple), and the filling is so easy. Just grab your favourite sausages, remove the casings and mix in a few extra ingredients.

These GF twisted sausage rolls bake up crispy, golden, and perfectly savoury. They’re the kind of appetizer that disappears the second they hit the table. Whether it’s Christmas Eve, a casual appetizer night or just because you feel like it!

Gluten Free Flours Used For Twisted Sausage Rolls

GF flour blend – For this recipe, I used millet flour, tapioca starch and potato starch with psyllium husk for the binder. An ideal combination for creating a dough that’s strong enough to twist, although this has to be handled gently.

For the best results with gluten free baking I prefer to use a kitchen scale. This makes measuring ingredients not only more accurate but also less clean up, when not using all those cups and spoons. Here is the link to the scale that I use.

How To Make GF Twisted Sausage Rolls

  1. Make the Pastry

    Combine the gluten-free flours, psyllium, sour cream, butter, baking powder, sugar and salt. Add the cold water gradually until the dough shapes in to a ball. Chill 20 minutes

  2. Prepare The Filling

    In a bowl mix the sausage meat, diced onion, egg, salt and pepper

  3. Roll Out the Dough

    Roll the dough into a rectangle about ¼ inch thick.

  4. Assemble the Gluten-Free Twisted Sausage Rolls

    Spread sausage mixture evenly over one half of the pastry sheet. Fold the uncovered pastry over the top. Gently press down to even out the top, then cut into strips and twist each strip.

  5. Bake

    Place the gluten-free twisted sausage rolls on a parchment-lined tray. Brush with beaten egg for a golden finish. Bake at 425°F for 25–30 minutes, or until golden and cooked through.

  6. Serve

    Let cool slightly, then serve with your favourite dip.

Ingredients
  

For The Pastry

  • 120 g millet flour
  • 60 g tapioca starch
  • 70 g potato starch
  • 1 tsp baking powder
  • 1 tsp sugar
  • 1 tsp salt
  • 1/4 tsp xanthan gum
  • 4 g psyllium husk powder
  • 40 g sour cream
  • 100 g cold butter cubed
  • 60 g cold water

For the Filling

  • 180 g sausage meat, about 2 sausages I used Johnsonville Bratwurst that is GF
  • 1/4 small onion, finely diced
  • 1 medium egg
  • 2 tbsp chutney (optional)
  • !/2 tsp salt
  • 1/8 tsp pepper

Egg wash

  • 1 small egg
  • 1 tsp milk
  • 1-2 tsp sesame seeds (optional)

Instructions
 

Make The Pastry

  • In a large bowl, whisk the gluten free flour blend, baking powder, sugar, salt, xanthan gum and psyllium husk powder
  • Add sour cream and butter to the flour mix, pour in the water and mix everything well until there is no loose flour.
  • Knead gently with just a little water on your hands until the dough is smooth. Cover and let rest in the fridge for 20 minutes.
 Lightly flour a large piece of parchment paper
  • Roll out the dough into a large rectangle, about 12 x 14 inches and 1/4 thick. Trim the edges to form a straight line.
  • Preheat the oven to 425°F

Make The Filling

  • Into a medium bowl empty the sausages from their casings and add the egg, onion, salt and pepper. Combine the ingredients well.
  • On the top half of the rolled out pastry spread the sausage mix and then add the chutney.
  • Fold the bottom half of the pastry over the top of the filling and press down slightly. Slice into approximately 1 inch wide strips. Gently twist each piece a couple of times. They will break if you twist them too much.
  • Place the twists on a baking sheet lined with parchment paper.
  • Brush with the egg mixed with 1 tsp milk an sprinkle sesame seeds on top.
  • Bake for 25 to 30 minutes, until the pastry looks golden and crisp.
