These are quick and easy and oh so delicious ! Great with a soup or stew, or just to munch on when you are on the go. We have added in fresh ingredients so these biscuits are far from dry.
Ingredients:
Two cups of all purpose gluten free flour (I used Namaste’s perfect flour blend)
1 Tbsp of Gluten Free baking powder
1/2 tsp of salt
6 slices of bacon ( I used Olymel naturally smoked gluten free bacon)
1 clove of garlic
1 small onion
2 Tbsp of melted butter
1 cup of milk
1 egg
1 1/2 cup of cheddar cheese
1/4 cup of grated Parmesan
Topping:
2 Tbsp of finely chopped parsley
1 Tbsp of butter
1 clove of garlic
Method:
• Preheat your oven to 450 degrees
• Grease a baking sheet or use parchment paper
• Cook your six strips of bacon and put to the side.
• Add your garlic and onion together in a food processor (I used the ninja master prep), or finely chop.
• Cook your onion until slightly translucent and put aside with bacon.
• Whisk your dry ingredients in a bowl
• Whisk your wet ingredients into a bowl including your cooked bacon, onion and garlic.
• Combine your wet ingredients with your dry ingredients. The dough will be a bit sticky.
• Add your cheese’s and mix well (Mix with hands if needed)
• Use an ice cream scooper to make your biscuits or use hands to make a small ball onto baking sheet
• Bake for 12-15 minutes or until slightly golden brown
• Mix your butter, parsley and garlic in a bowl and lightly brush the top of biscuits once out of the oven
