Fig and BlackBerry Ice Cream

We have still been picking and eating blackberries from the garden and they have been producing since July now. So we have made many yummy dishes and frozen many bags of berries.

The flavours in this fig and blackberry ice cream are amazing! With few ingredients and very little sugar. The figs add their own sweetness and you can strain out the seeds if you wish, but we did not, as it all adds to the taste and texture.

Ingredients

• 6 -7 dried figs … or fresh

• 1/2 C. blackberries.

• 1/4 c water

• 1 Tbsp honey

• 1 Tbsp sugar

• 1/4 tsp lemon juice

• 1 cup of cream

• 1 cup of whole milk

• Pinch of salt

Method:

Add water, sliced figs, blackberries, honey, sugar, lemon juice and salt to a pot.

Simmer with the water for about 10 minutes or until soft – stir often.

Cool well and put mixture into blender.

Chill in the fridge for about 30 minutes.

Pour chilled mixture into ice cream maker and make according to your specific manufacturer’s directions.

Serve immediately or chill in the freezer for a firmer ice cream.

If you do not have an ice cream maker, just blend fruit and milk products together until well combined.

Pour into a large bowl and freeze.

Stir a few times over a couple of hours for a nice consistency.
