I don’t know about you, but after all the heavy meals over the Christmas holidays … it’s time for a lighter dish.
This one is a nice combination of protein, light carbohydrates and lots of fibre. A tasty and satiating meal that is easy to prepare, with a herb vinaigrette, topped with pumpkin and pomegranate seeds.
Another bonus to this recipe is to be able to cook up the last of the garden buttercups we grew over the summer. They kept well in the garage in a cool environment without freezing.
These red lentils are one of the best dried foods to have in the cupboard. They are so versatile and are quick to cook. Great for soups or salads.
